In the sixth episode of Luke Nguyen’s France, Luke journeys to Marseille, the capital of Provence, where he immerses himself in the city’s food and art culture. Luke hitches a ride to the local fish market with Marseille restaurateur, Georgina. With ingredients fresh off the boat, the pair draws a crowd cooking Georgina’s fusion African-French fish soup beside the old port. Luke then heads to a grungy art space to create another fusion dish with Michelin star chef, Sébastien Richard, which draws on flavours from the Mediterranean and is cooked in a mobile wok cart. Luke finds a gorgeous little harbour to cook his delicious salt and pepper cuttlefish, and heads out of town to reunite with his uncle. They swap old family stories and cook a French-Vietnamese veal and red wine dish in his small home kitchen.
